1 medium onion, chopped
1 medium bell pepper, chopped
1 cup mushrooms, chopped
1 medium zucchini, chopped
1 large beefsteak tomato, chopped
1/4 cup soy or coconut aminos
3 tbsp honey mustard
Saute onion, mushroom, and bell pepper in aminos until onion is translucent. Add zucchini, tomato, and honey mustard. Reduce heat and cover. Simmer for 20 minutes. Serve over noodles or rice.
