Water saute mushrooms, onion, and bell pepper until onions are translucent. Serve on tortillas with sour cream and guacamole.
We got this recipe from a video on Instagram and adjusted for our tastes. We used to love getting Fajitas at the nearest Mexican restaurant, so a lot of our favorite recipes are whole food, plant-based replacements.
Like most of the recipes we enjoy, it’s really easy to adjust for other diets. For meat eaters, just add some high quality ground or chopped meat to the mushrooms, onions, and pepper. For keto folks, drop the onions and be sure to use low carb tortillas.
