Unfortunately, our March 30 day challenge was postponed thanks to the Super Tuesday tornadoes, but we’re going to re-start it on Wednesday!

Our goal should be to eat 5 servings of vegetables and 2-3 servings of fruit each day and to make sure those fruits and vegetable are from a variety of color groups, but for most of us, we have don’t come close, so this challenge will be a great starting point.

We all know antioxidants are great for us, but did you know that antioxidants are pigments? That’s right… Antioxidants are what give your fruits and veggies color! That’s why we want to eat the rainbow, and we want to try to eat locally-grown, in-season fruits and vegetables whenever possible. More color = more antioxidants.

The goal for the next 30 days is to eat one serving of vegetable (or fruit) from each of the color categories every day. You might have have to branch out and try a veggie you’ve never had before, but the result will be an big increase in nutrients and antioxidants in your system, so stick with us!

If there is only one thing I could get everyone to do to be healthier, this would be it!

I’m including two documents that are also available on the Facebook group. The first is the tracker, so you can log your veggies every day. The second is a chart to help you understand the color groups. There are more veggies in each group, so it’s not an exhaustive list. It’s just to get you started.

We’ll have a check in post every five days, and I’ll share with you some of the awesome benefits of increasing your daily intake of veggies.
