Ingredients
4 carrots cut to fit buns
1/4 cup apple cider vinegar
1/4 cup water
2 tbsp soy sauce or soy aminos
1/2 clove garlic
back pepper to taste
4 toasted buns
Directions
Boil water. Lower to medium and add carrots. Cook until fork tender.
In container with a tight-fitting lid, combine the remaining ingredients. Tighten lid and shake well. Place carrots flat and submerged in container and marinate for 4-6 hours.
Put the carrots in the oven at 350 until heated through. Serve on buns with your favorite condiments.

This has become a regular weekend favorite in our house. We used to love hot dogs until we gave up processed food. (Did you know that processed meat is a group one carcinogen? That’s the same group as asbestos!)
These dogs make a great replacement. We prep them in the morning and then enjoy them for dinner or lunch with our favorite whole-food-compliant chips or some homemade french fries.
