This is my take on avocado toast. 🙂
1/2 medium tomato
4-6 spinach leaves
2 piece whole grain toast
1. Toast 2 pieces your favorite whole grain toast.
2. Slice avocado, cucumber, and tomato.
3. Layer cucumber, tomato, avocado, and spinach on one piece of toast.
4. Season to taste.
5. Place other piece of toast on top and enjoy!
A friend on Facebook shared a meme complaining about having to scroll and scroll before seeing the recipe. When I thought about it, I felt the same way, so from now on, you’ll see the recipe on top! I’ll include notes about variations, substitutions, and cooking tips below the recipe.
I eat a nutritarian diet, so my main focus is on amping up the nutrients in all of meals. I don’t eat meat, eggs, dairy, oils, sugar, or processed food, although you can eat those foods on a nutritarian diet as long as they make up less than 10% of your caloric intake.
Most of the recipes I share can be easily converted to just about any diet. If you eat keto, leave off the tomato and make with your favorite low carb bread. There are some great choices for low carb bread on Netrition.com.
If you’re like my husband and just have to have an egg in the morning, throw a fried or scrabbled egg in the middle.
A note about bread… Almost any diet that allows bread suggests eating whole grain breads. Make sure you read the ingredients when you’re buying! The government standard for whole grain and what health experts mean when the say whole grain is not the same thing.
The reason this is my favorite breakfast? It’s simple, tastes great, and allows me to start my day off with a burst of energy from vegetables.
